The Bolgheri Superiore Ferrugo is a pure Merlot that is fermented in cement tanks for about 25-30 days. The malolactic fermentation occurs spontaneously during the aging process, which also takes place in cement tanks. Vinification begins with the manual harvesting of the grapes, selected berry by berry. The process includes a pre-fermentation maceration without pressing, followed by alcoholic fermentation in contact with the skins at a controlled temperature of 25°C. Subsequently, the wine is aged in French oak barrels for 18 months and further aged in bottles for 12 months before being released to the market. In the glass, it reveals notes of wild strawberries, moss, and licorice. On the palate, it stands out for its excellent balance between freshness and tannins, offering a combination of total pleasure with a tapered finish marked by an interplay of spice, fruit, and toastiness. Perfect as a wine for a finely crafted dinner, it pairs splendidly with typical Tuscan first and second courses, medium-aged cheeses, cold cuts, and cured meats.
