Vermentino Pecorella briaca

Vermentino, the queen grape of the Maremma coast, is the heart of the most representative white of the DOC Maremma Toscana. In this wine Girasasso seeks a balance between maturation and alcohol content, focusing on a distinctive acidity and more restrained alcohol levels, whenever possible and based on the current harvest. Each harvest reflects the artisanal authenticity and speaks to the complexity of the season. The grapes, hand-harvested and pressed whole, follow different winemaking processes depending on the clone and parcel of origin. A slow fermentation takes place in steel tanks, following a cold clarification of the must to enhance its aromatic potential. The batches are kept separate until the final blending, with weekly stirring of the lees to add complexity and minerality to the taste.
