Cerasuolo di Primitivo Le Specchie

'Le Specchie' is the common name given in Apulia in the local dialect for the piles of stones found in the fields of the Murge area. The soils are very rich in stone and farmers, back in the days, they took them away from the land and pulled them aside by throwing them aside. It is a cherry-colored Primitivo, somewhere between a rosé and a red, obtained from a maceration of about 30 hours on the skins. A wine perfect with aperitifs and appetizers, pasta with sauce, tuna, cured meats, cheeses, and grilled vegetables.
