This wine, mostly from spur-pruned and partially from bush-trained vines, grows on soils of different nature: calcareous with red soil and tufaceous, generating the rich and diverse shades of this wine. Fermentation occurs spontaneously in open vats, partly de-stemmed and partly whole bunch, and is completed between 7 and 10 days, accompanied by light pumping over and followed by ageing in steel vats.
