The Sauvignon variety is rarely cultivated in Vallagarina, but it expresses peculiar varietal characteristics reminiscent of peach and elderflower flowers. It is grown on very calcareous soils and fully expresses the typical minerality of the Dolomite soils. The wine is dry, aromatic and slightly acidic, expressing itself best in youth, but can tolerate 4-5 years of aging.
