This distinctive wine is made with Corvina, Corvinone and Rondinella grapes, which are harvested in small wooden trays and left to dry for almost 4 months in a hut 300m above sea level. These optimum climatic conditions allow for natural drying due to the particular exposition and natural ventilation, resulting in perfect, healthy grape maturation. To reach the best expression and complexity, the drying process continues until optimal parameters are reached.
Afterwards the estate proceeds with crushing, destemming and fermentation in small barrels with gentle daily breaking up of the cap. The fermentation, due to the low temperature and high sugar content, continues for a long period of time. The wine is then drawn off and put into small barrels where it is kept for circa 2 years. The result is an incredible, complex, dense and elegant wine.
Integrated certified wine by “SQNPI” (Italian Quality System of Integrated Production).
