San Donatino Chianti Classico “Poggio ai Mori” is undoubtedly the most emblematic wine and is dedicated to the estate from which the majority of the Sangiovese grapes come from. Spontaneous fermentation, no temperature control, approximately three weeks of maceration on the skins, aging on fine lees for about 6 months, steel aging for about 2 years, and bottle refinement for about 6 months before release to the market. The result is a vibrant Chianti Classico, electrifying and dynamic, with typical fruity notes of peach, cherry, and red orange in the background. The palate is lively, with great rhythm, presence, and roundness. The finish has a subtle but persistent and seductive savoriness.
