The Barbagianni (Barn Owl) is a nocturnal bird of prey and is the only bird whose flapping wings are silent. In San Donatino, Barbagianni is a way of expressing the Sangiovese. The 100% estate grown grapes are handpicked and harvested early to intercept absolute freshness. Spontaneous fermentation by yeasts, no temperature control, and only use of sulfites. The wine is kept in contact with its skins for only a few hours to extract a small fraction of the anthocyanin content. It is then aged in steel for 4 months, then aged in the bottle for approximately 2 months. The motto is ‘Simplifying means by adding lightness’.
