The “Superiore” represents a premium version of Amalia’s classic Barbera d’Alba, obtained from vinification of the finest grapes from the Sant’Anna vineyard, and renowned for superior complexity and structure. The grapes are harvested by hand, with meticulous bunch selection. After maceration with the skins for 10 days and malolactic fermentation, the wine matures in 500 liter tonneaux for at least 12 months, developing subtle woody notes that enrich the structure. This provides depth, roundness, notes reminiscent of sour cherry tart, warmth and envelopment. This wine pairs perfectly with the Piedmontese Bagnacauda, a rich and aromatic sauce based on garlic and anchovies. The dark and toasted tones of the wine harmonize beautifully with the richness of the sauce, while the soft tannins contribute to balancing the flavors.
