Palate Sweet, supple, balanced by freshness and a slight astringency, the finish is slightly bitter with medicinal herb notes.
The grapes are harvested when slightly over-riped and dried in the fruit cellar for 2-4 months. Than they are pressed and the alcoholic fermentation starts, which lasts in oak barrels of 50 and 100 litres for about 2 months until the alcohol content and the natural final residual sugar level are reached. The wine remains in the containers for subsequent refinement which can last up to 48 months. It reaches full maturity after at least 4 years from the harvest and the plateau is between 5 and 15 years.
