The Metodo Classico Dosaggio Zero sparkling wine embodies the new trend of high-quality bubbles from Piedmont with this joyful interpretation of pure Nebbiolo, a grape traditionally associated with structured red wines. After harvesting, the clusters undergo direct pressing and fermentation that lasts for about 20 days at a controlled temperature, around 15°C. Subsequently, the base wine undergoes refermentation in the bottle. Bottle aging for 36 months imparts a unique personality and refined elegance, distinctive characteristics belonging only to the great interpreters of this style. In the glass, the sparkling wine presents itself with a bright color and lively foam. On the nose, intense notes of red fruits, white flowers, and a slight minerality opens, anticipating a fresh, balanced, and finely nuanced sip. The persistence and delicacy of the bubbles give the wine an elegant structure and a long, satisfying finish of spices, candied fruits, cedar, and pastry notes.
